Ingredients
- 2 cups okro, chopped
- 2 pieces of fish (fresh or smoked)
- 3 tomatoes and 1 onion, chopped
- 1 fresh pepper
- 1 tablespoon palm oil
- Salt and a pinch of ground crayfish (optional)
How to make it
Okro (okra) stew with fish and tomato. Serve it with banku, a small portion of rice or boiled yam.
Method
- Heat the palm oil and fry the onion until soft.
- Add the tomatoes and pepper and cook for 10 minutes into a thick sauce.
- Add the fish and a splash of water and simmer for 5 minutes.
- Stir in the okro and cook for 5 to 7 minutes until just tender. Season and serve.
Tips
- Don't overcook the okro; it stays brighter and less slimy.
- One tablespoon of palm oil is enough for two servings.
