Ingredients
- 1 ball of banku (made from corn and cassava dough)
- 1 small tilapia, cleaned
- 1 fresh pepper, ½ onion and 1 tomato for the pepper sauce
- Ginger, garlic and salt for the fish
How to make it
Banku with a whole grilled tilapia and fresh pepper: a classic Ghanaian meal.
Method
- Score the tilapia on both sides. Rub with blended ginger, garlic and salt and leave for 15 minutes.
- Grill the fish over charcoal or under a hot grill for 8 to 10 minutes on each side, until the flesh flakes easily.
- Grind the pepper, onion and tomato with a pinch of salt to make a fresh pepper sauce.
- Serve the fish with the banku and the pepper sauce.
Tips
- Grilled fish is lighter than fried fish.
- Banku is filling, so a medium ball is plenty for one person.
