Ingredients
- 2 cups black-eyed beans, soaked and skins removed
- 1 red bell pepper and 1 fresh pepper
- 1 onion
- 2 tablespoons vegetable oil
- 1 stock cube or salt to taste
- 2 boiled eggs, sliced (optional)
How to make it
A West African steamed pudding made from blended black-eyed beans and peppers. High in plant protein and fibre.
Method
- Blend the peeled beans with the peppers, onion and enough water to make a thick, smooth batter.
- Stir in the oil and seasoning.
- Pour into greased ramekins, small bowls or leaves, adding egg slices if using, and cover.
- Steam over simmering water for 45 to 60 minutes, until firm and a knife comes out clean.
Tips
- Soaking the beans makes the skins easy to rub off.
- Moi moi keeps well in the fridge for two to three days.
