Ingredients
- 2 ripe plantains, peeled and cut into cubes
- 1 thumb-sized piece of ginger
- ½ small onion
- ½ fresh pepper (to taste)
- 1 teaspoon vegetable oil
- Pinch of salt
How to make it
The spicy fried plantain snack, baked in the oven with just a little oil. All the ginger and pepper flavour, much less fat.
Method
- Heat the oven to 200°C and line a baking tray.
- Blend or grind the ginger, onion, pepper and salt into a paste.
- Toss the plantain cubes with the paste and the oil until coated.
- Spread out on the tray and bake for 20 to 25 minutes, turning halfway, until golden at the edges.
Tips
- Use very ripe (mostly black) plantain for the sweetest result.
- Serve with a handful of roasted groundnuts for a fuller snack.
