Ingredients

  • ½ cup (100g) rice
  • ¼ cup black-eyed beans or red beans, soaked overnight
  • 3 to 4 dried waakye (sorghum) leaves
  • 1 piece of grilled fish
  • Salad of lettuce, tomato and cucumber
  • 1 teaspoon shito
  • Small portion of spaghetti (optional)

How to make it

Waakye, the Ghanaian rice and beans dish, with grilled fish and salad and just a little shito.

Method

  1. Boil the beans with the waakye leaves for 30 to 40 minutes until almost soft.
  2. Add the washed rice, a pinch of salt and enough water to cover by about 2cm. Cover and cook on a low heat for about 20 minutes until the rice is tender. Remove the leaves.
  3. Grill the fish while the rice cooks.
  4. Serve the waakye with the fish, salad and a teaspoon of shito.

Tips

  • Shito is rich in oil, so a teaspoon is enough for flavour.
  • Fill half the plate with salad to balance the meal.
